Fried onions are a classic with many dishes

Onions refine countless dishes, mostly they are seared with them. However, roasted onions are a special variant. These have a very special aroma that raw or seared onions can hardly reach.

Fried onions go well with mashed potatoes, a roast, in a pea soup or with liver. Of course, you can buy ready-made fried onions in stores. But they taste even better if you prepare them yourself.

Sure, this takes a bit more work, but it tastes even better afterwards.

What do perfect fried onions look like?

Fried onions are so popular because of their sweet, mild taste. If you braise or roast onions, sugar is released. This ensures the delicious aroma. This way, people can also enjoy onions that they otherwise avoid because of their heat. The main thing with roasted onions is that they become nice and crispy and that is the real art.

The vegetables contain a large amount of water and this must evaporate before the really typical roasted onions can arise. It is clear that this can take some time. Fried onions are of course much quicker to prepare. One difficulty is getting the onions to be as crispy as possible without burning them.

Prepare fried onions - step by step instructions

If you want to make fried onions yourself, then it takes time and patience, in any case, this is not possible quickly.

➤ Step 1: Peel and cut onions

First the onions are peeled and cut into fine rings. Which onions you choose for the fried onions doesn't really matter. If possible, the onion rings should be so thin that they appear almost transparent. But this can only be done with a very sharp knife.

➤ Step 2: Fry the onions

You can use either oil or butter for frying, but butter gives the onions a more delicate taste. In a large pan, let the butter melt on the middle level. Use enough butter to cover the bottom of the pan.

As soon as the butter foams slightly, the onion rings can be added to the hot fat. Now fry the onions in a nice glassy way, without them getting a brownish color.

➤ Step 3: Dust the onions with flour

Now turn the heat of the cooker a little higher and dust a little flour over the onions. This should give the onion rings a golden yellow color within the next 10 minutes. Stir again and again so that nothing burns.

➤ Step 4: Spread the onions on a baking sheet

Now the onions have a nice color, but are not yet crispy at all. Spread baking paper on a baking sheet and spread the onions over it. Please make sure that the onions are spread out evenly over a large area and if possible not on top of each other. If the quantity is too large, then put it in the oven in two stages.

Preheat the oven to 80 degrees, then the onions come in for 90 to 150 minutes. In the oven, the water can escape from the onions without burning them. In between you can shake the baking sheet and see if the onion rings rustle. Then it's time to see if they're already crispy enough.

Of course, you can also roast onion rings in a deep fryer or in a saucepan in a lot of oil. However, they are then very greasy and usually do not become as crispy as in the oven.
