Courgettes have long been no exception when it comes to preparing bread. You can work this vegetable into the bread dough perfectly. Freshly baked, it is a delicious accompaniment to a hearty piece of grilled meat or a savory salad.
Delicious zucchini bread from a crate
- 2 small to medium-sized zucchini
- 250 g flour
- 1 packet of dry yeast or half a cube of fresh yeast
- Salt pepper
- 200 ml vegetable broth
- 1 egg
- 4 tablespoons of olive oil
- 1 teaspoon of dried herbs, e.g. Oregano, basil
- 1 teaspoon of fresh and chopped rosemary
- 1 pinch of chilli flakes
- 250 g feta, diced
1Roughly grate the zucchini either by hand or with the food processor. Then they are steamed in the pan with a little butter for three minutes. Add salt and pepper and let the steamed zucchini cool down a bit.
2For the dough, mix flour with yeast and a pinch of sugar in a large bowl. Whisk the vegetable broth with the egg, herbs, oil and chilli. Then pour this mixture into the bowl with the flour. Now add the grated and steamed zucchini and stir thoroughly.
3Finally, lift the feta cubes underneath and fill this dough into a greased and floured crate. Just spread the bread dough until smooth and bake it at 180 ° C (circulating air 160 ° C) for about 55 minutes until golden brown.
The finished zucchini bread is cooled on a wire rack. This bread tastes best fresh and goes well with salads, grilled meat and herb butter.
