It is a nightshade plant that more and more hobby gardeners are growing themselves and is used primarily in Mediterranean and Arabic cuisine. But also with us, eggplants have many fans who not only process the vegetables fresh, but also dry them. After all, dried eggplants can be used in a variety of ways. In addition, the aroma intensifies through drying and thus sets special accents in many dishes.

Of course, you don't have to buy them extra to refine dishes with dried eggplants. You can also easily dry eggplants yourself in a few simple steps. You have four options. Which variant you choose is of course entirely up to you.

This is how aubergines can be dried

You can dry eggplants in different ways. You can e.g. use an automatic dehydrator or the oven or dry the eggplants outdoors or in a warm, dry place in the house. Depending on which method you choose, there are different points to consider.

Basically, the first step is the same for all methods: cut the eggplants e.g. with a slicer or with the help of the food processor in thin slices. Depending on the drying variant, you must then continue as described.

❶ dry in the automatic dehydrator:

Eggplants are the easiest to dry in the automatic dehydrator. To do this, place the slices on the inserts and set the machine to the specified temperature and duration, similar to the temperature for drying tomatoes. This should be around 42 ° C.

❷ dry in the oven:

It takes a little longer to dry in the oven. Still, this is a great way to dry eggplants. To do this, lay out a grid or baking sheet with baking paper and place the slices next to each other (not on top of one another!) Then heat the oven to approx. 50 ° C and let the slices dry overnight. It is important, however, that you turn the panes regularly so that they can dry from all sides. If the panes are not completely dry, mold can form.

❸ drying outdoors:

If you prefer to dry your eggplant slices outdoors, you need a warm location that is safe from animals and protected from the rain. Full sun is not cheap, otherwise the panes "fade" and many valuable vitamins are lost.

Place the slices on a grate with baking paper and also turn them over regularly. Depending on the location and temperatures, it can take up to 3 days for the panes to dry completely. It is best to always bring the grate into the house in the evening to avoid animal visits at night.

❹ drying in the house:

Also warm, dry places in the house such as the attic or the winter garden are good for drying eggplants. The best way to do this is to dry the eggplant slices hanging. To do this, thread a thread in the middle of the slices and hang the slices on a clothesline or other string, for example.
