❖ Recipe No. 1 - simple beetroot soup
Ingredients:
- 3 leek sticks
- 1 onion
- 6 tubers of beetroot (ready cooked)
- 8 potatoes (medium-sized, diced)
- 1.5 liters of vegetable broth
- 100 grams of crème fraîche
- Salt and pepper to taste
- some oil
Preparation:
Clean the leek and onions, cut them into small pieces and sweat them in heated oil. Pour the whole thing with the broth, add the beetroot and the diced potatoes and cook everything in about half an hour. Finally add the crème fraîche and season the soup with salt and pepper.
❖ Recipe No. 2 - beetroot soup with coconut milk
Ingredients:
- 2 tubers of beetroot (peeled and cut into pieces)
- 1/4 liter of vegetable broth
- 1/2 can of coconut milk
- Salt and pepper to taste
- Crème fraîche at will
- 1 bunch of dill (chopped)
Preparation:
First cook the finely chopped beetroot in the broth until soft. Then puree the vegetables and pour in the coconut milk. Then season the soup to taste with salt, pepper, dill and crème fraîche.

Ingredients:
- 2 medium-sized beetroot
- 4 cups of water
- 2 cans of mixed beans
- 1/2 can of coconut milk
- Salt and chili powder to taste
Preparation:
Peel the beetroot, cut it into very small cubes and put it in a saucepan. Then bring the vegetables to the boil together with the water and continue cooking for about ten minutes. Then add the beans together with the liquid from the cans and the coconut milk and let everything boil again. Then season with salt and chili powder.
