Do you like to eat peppers? Then you will love these recipes, because you can quickly and easily conjure up a delicious paprika soup from the pods.

Pepper soup tastes simply delicious. Whether steamed, fried, grilled or even raw - peppers are delicious and also contain many healthy nutrients.

However, what few people know is that the pods can also be used to conjure up a delicious soup. It usually tastes fruity and piquant and is just the right thing for anyone who likes to cook with ease. After all, cooking a paprika soup is child's play. These three delicious recipes prove it.

Recipe No. 1 - Quick Pepper Soup:

  • 500 gr mixed peppers
  • 1 large onion
  • 2 finely chopped cloves of garlic
  • 500 ml creme fraiche
  • 500 ml vegetable broth
  • olive oil
  • salt and pepper
  • some balsamic vinegar

First peel the peppers and the onion and cut into cubes. Then put everything together in a saucepan and fry in the olive oil for about five minutes. You already have to salt the vegetables a bit. Then you have to deglaze the whole thing with the vegetable broth. Now add the garlic. Now the soup has to simmer for about 20 to 30 minutes with the lid closed.

As soon as everything is cooked gently, stir in the creme fraiche and mash the soup finely using the hand blender. Now all you have to do is reheat it and season with salt, pepper and balsamic vinegar.

Recipe No. 2 - yellow pepper soup:

  • 500 gr yellow peppers
  • 450 ml vegetable broth
  • 1 tablespoon of olive oil
  • 50 ml cream
  • 1/2 tbsp curry powder
  • 1 onion
  • salt and pepper
  • some creme fraiche

First peel the onion and cut into small strips. Then clean the peppers and cut them into cubes. Then heat the oil and briefly fry the onion and the pepper cubes. Then dust everything with the curry powder and top up with the cream and the vegetable broth. The soup must then cook for about 20 minutes.

When the 20 minutes are up, you have to puree the soup and pass it through a sieve. Finally, season with salt, pepper and, if desired, with a little creme fraiche. Finished!

Recipe No. 3 - bell pepper soup with scampi:

For the marinade:

  • 4 ready-to-roast scampi
  • 50 ml of olive oil
  • 1 clove of garlic pressed through
  • chopped herbs of your choice

For the soup:

  • 50 grams of butter
  • 350 gr yellow / red bell peppers (finely chopped)
  • 25 gr spring onions (cut into small rings)
  • 750 ml chicken broth
  • 1 chopped clove of garlic
  • 1/4 finely chopped chili pepper
  • 1 pinch of sugar
  • 250 ml cream
  • salt and pepper

First, carefully mix the ingredients for the marinade so that you can marinate the scampi in it for at least an hour. In the meantime, heat the butter for the soup and add the remaining ingredients except for the cream. Then let everything simmer until the peppers have softened. Then add the cream and let it simmer for another ten minutes. You can then puree the soup and season to taste with salt, pepper and sugar.

When the soup is ready, put the marinated scampis in a pan and quickly fry them in the oil of the marinade. Then put on wooden skewers, arrange the soup and put the skewers on top.
